For years, my mama has made a simple pasta salad for any kind of gathering, She has switched it up and tried to bring other things throughout the years, but people always end up requesting her delicious pasta salad, so it has become her signature dish.
Until recently, I’m ashamed to say I wouldn’t even try it (I KNOW! So annoyingly picky). I tried it the last time I went home and fell in love.
The best thing about this salad is it’s super simple and you can modify it to fit your liking (especially important for me).
Robust Pasta Salad:
1 box multicolored Rotelle noodles
1 green pepper
2 cups chopped cauliflower
2 cups chopped broccoli
2 cups cubed cheddar cheese
1 cup chopped carrots
1 bottle Italian dressing
Boil the noodles and let them cool in a large bowl. Cut up the veggies and mix in bowl with noodles. Pour in dressing and let marinate for at least an hour before serving. Serve cold.
If you want some variety, add in different veggies!
That’s all there is to it, a delicious side to bring to a picnic or potluck or to just devour at home (which is my plan).
